The Wedding Plov
Plov (osh) is the centerpiece of every Uzbek wedding feast. It is traditionally cooked by men in enormous cauldrons called qozon, often serving hundreds of guests from a single batch. The preparation begins at dawn, and the dish (a fragrant mix of rice, meat, carrots, and spices) is considered a symbol of abundance and blessing for the newlyweds.
